Mushroom Spinach Curry


Ingredients :

Mushroom - 1 Bowl
Mushroom Spinach Curry
Spinach - 1 Bowl
Oil - 3 Tbsp
Turmeric - A pinch
Onions - 1/2 Cup
Salt

To Grind :

Coconut - 4 Tbsp
Tomato - 1 large
Green Chilly - 1
Ginger - 1'' size
Cashew - 5
Method :

Clean the mushroom and chop it to small pieces.


Grind Coconut, Tomato, Green Chilly, Cashews, and Ginger to smooth paste.

                             

Heat a pan with Oil and add 1/2 cup onions, saute it until golden brown. Then add the grinded paste to it. Add turmeric and salt.


Cook until the gravy thickens.


Then add Mushroom and spinach and toss well. Add 1/4 cup water and cook.


Once the gravy thickens and oil oozes out, switch off the stove. And transfer it to a serving dish.


Serve with Roti or paratha.

Mushroom Pepper Fry

                Lets cook  Mushroom Pepper Fry today.....
Ingredients :

Mushroom - 1 pack                                                            Preparation Time : 10 Min
Mustard Seeds - 1/4 Tsp
Urad Dal - 1/4 Tsp
Turmeric Powder - 1/4 Tsp
Salt
Pepper Powder - 1 Tsp
Mushroom Pepper Fry
Method :
Heat a pan with oil, add mustard seeds, Urad dal.

Once it splutters add chopped mushrooms.


Add Salt and Turmeric powder. Saute it well.


 Mushroom looses out water and cook until all the water evaporates.


Finally add pepper powder and stir it for few seconds


Mushroom pepper fry is ready .


Serve hot as a side dish with curd rice or Roti.

Mushroom Briyani

              Here's the Mushroom briyani recipe.

Ingredients :
Basmati Rice - 1 Cup
Mushroom - 3 Cups                                                 Preparation Time : 30 Min
Onions - 1 Cup
Tomato - 2    
Ginger/Garlic paste - 1 Tbsp                                     Serves : 4
Green Chilly - 4
Bay Leaf - 2
Cardamom - 3
Cinnamon - 1'' size
Cloves - 3
Star Anise - 2
Mint leaf - 1 Bunch
Coriander leaf / Curry Leaf
Turmeric -1/2 Tsp
Coconut milk - 1 Cup
Water - 1 Cup
Salt - 1 Tbsp
Ghee
Oil

Method :

Chop tomatoes and onions. Clean and cut mushroom.

                                

Heat a pan with 4 Tbsp oil, add Bay leaf, Cardamom, Cinnamon, Cloves, Star Anise , Saute it for few seconds. Then add Green Chilly and Ginger garlic paste. Saute it until raw smell goes off.

                               

Add onion and tomatoes. Cook until tomatoes softens. Then add Mushroom,Mint leaf, salt and Turmeric.

                              

Stir all the ingredients well. Add coconut milk and water (1:2 Ratio). Add 2 Tbsp ghee to it.

                              

Once the water gets to boil well, add the soaked basmati rice. 

                             

Check salt and close the pressure cooker lid. Simmer the stove to low flame. Switch off the stove in 12 Minutes. Open the lid and and stir the rice carefully.

                             

You''ll get nice aroma. Coconut milk gives nice flavor to the rice. Serve hot with Pachidi.

Stuffed Mushroom

            Stuffed Mushroom is a restaurant style appetizer stuffed with Cream cheese, Garlic, Onions and Parmesan Cheese. Stuffed mushroom is one of my favorite recipe at Olive Garden Italian Restuarant. From the day i tasted this recipe there, I always think to try this recipe at home. And finally i made it one day which turned not bad. Hope everyone would enjoy my recipe.

Ingredients :

To Saute :
Mushroom - 6 Large                                                  Preparation Time : 20 Min
Garlic - 3 pods
Onions - 1/2 cup                                                        Serves : 2 People
Salt
Stuffed Mushroom

To Stuff :
Egg yolk - 1
Cream Cheese - 2 Tbsp
Parmesan Cheese - 2 Tbsp
Sauted Ingredients
Bread Crumbs - 1/2 cup









Method :

Take 6 large mushrooms and clean it. Carefully remove the stem from the center without breaking.

                            

Chop the mushroom stem finely into small pieces. Chop Onions and garlic too.

                            

Heat 1 Tbsp oil in a pan, add garlic, onions and saute it for a while. Add a pinch of salt. Finally add chopped mushroom and saute it well until dry. Transfer it to a bowl.
                             

Add egg yolk in a cup and add cream cheese and mix it to smooth paste.

                            

Add the paste to the sauted mushrooms and mix it. Finally add Parmesan cheese and mix it before stuffing into the mushroom.

                            

Take the mushroom and fill it in the mushrooms. Sprinkle bread crumbs at the top. And Place it in a baking tray. Preheat the convention oven to 250 F. Complete the same process with all mushrooms.

                            

Place the baking tray in the oven and bake at 250F for 15 min. 

                            

Once done transfer the mushrooms to a serving plate.

Mushroom Gravy (Kalan Kuzhambu)

      This Mushroom Gravy is used has a side dish for Chappati, Poori, Rice, Dosa, Idly and Briyani's.

Ingredient :

Mushroom - 1 pack                                          Preparation Time : 20 min
Onions - 1/2 cup
Tomato - 1 small                                              Serves : 4 People
Curry Leaves
Mustard seeds
Oil
Turmeric
Salt

Masala to grind :

Coconut - 1/2 cup
Ginger - small piece
Garlic - 2 pods
Coriander seeds - 1 Tbsp
Cinnamon - 1 piece
Cloves - 3
Poppy seeds - 1/2 Tsp
Fennel seeds - 1/4 Tsp
Channa dal - 1 Tsp


Method :
Grind all the above ingredients to a smooth paste.

                             

Wash the Mushrooms well, in cold water & cut it into small pieces.

                             

Heat a pan with 2 Tbsp oil in the stove, add mustard seeds, Onions, Curry leaves & tomato. Then add Mushroom and salt. Saute it well.

                             

Add Turmeric Powder & Chilly Powder & mix it well. Finally add the grinded masala to the mushroom.

                             

Add enough water to the masala to boil and stir it occasionally. Close the pan with a lid for 10 min. 
Once the masala's ready you'll find oil floating on top.Switch of the stove. It is ready to transfer the gravy to a serving bowl. 

                             


Mushroom Gravy

    Mushroom Gravy is ready. Serve with hot Chappati's or Rice.
