Mysore Pak, Krishna Sweets Mysore Pak

                   This Mysore pak recipe is a krishna sweets Mysore Pak style. Ghee smothering in the sweet is its specialty. Once you drop it in your mouth it will start melting. Come lets try it today.

Ingredients

Gram Flour/ Kadala Maavu - 2  Cups                                  Cooking Time : 20 Minutes
Sugar - 3 Cups
Ghee - 1 1/2 Cup                                                                   Quantity : 40 Pieces
Oil - 1 Cup
Water - 3/4 Cup
(Mix oil+Ghee in a bowl
and heat until it gets warm)
Mysore Pak
Utensils needed :
Large Pan
Flat Tray - 1'' thick
Flat Laddle - For stirring
Knife
Small bowl with flat base.
       Set the Flat tray brushed with ghee before you start.

Method :

Heat a pan and add the Gram Flour in it. Reduce the flame and fry the flour for 10 minutes(Until you get nice aroma) without burning it. Switch off the stove. Add 4 Tbsp ghee to the flour and mix it well and sift the flour using a flour sifter. Sift it without any lumps.

                                    

Turn on the stove. Add sugar in the same pan and add 3/4 water in it. Keep stirring it until it dissolves and reaches one thread consistency.

                                    

Allow it to boil well. Finally add the flour in the sugar syrup and keep stirring without any lumps. Adjust the temperature accordingly.

                                    

Keep stirring it continuously, until it turns thick. When it gets half  thick, start adding Ghee+oil little by little in it. Add all the ghee+oil splitting to four portions. Its bit tricky process so lower the temperature once you stop stirring. You'll note the gram flour getting thicker and thicker at each stage.

                                    

You'll note bubbles protruding from the mix finally ,That's the stage you need to switch off the stove.
Pour the Mysore Pak in the tray coated with ghee.


Take a small cup and apply some ghee under it and smooth it evenly on the tray. Leave it for 5 Minutes and finally slice it using  a knife. Rectangular Pieces gives nice appearance to the sweet. Allow it cool well before you separate it.


Soft and ghee smothered Mysore Pak is ready. Have hot before it cools.

                  

Tips:
You can even add gram flour without roasting it.
You can even add Ghee fully without mixing oil.

Jalebi

           I'm a great Jalebi lover especially Lakshmi sweet jalebi is my all time favorite. Whenever me and my hubby go to our home town, my mother-in-law used to go buy hot jalebi's for us, she would ask the shopkeepers to prepare hot crisp jalebi soaked slightly in sugar syrup and run home to give us before it turns soft. I really miss those Jalebi's. She has also taught me to make Jalebi's at home. Spinning the Jalebi batter needs a special skill to get the right shape. I made it somewhat after a long practice. Lets try it today.

Ingredients :

Urad Dal - 1 Cup                                                                  Preparation Time : 1 Hr
Yellow/Orange Food Color - 1/4 Tsp
Baking Soda - Pinch                                                             Quantity : 20-25 pieces
Sugar - 3 Cups
Water - 2 1/2 Cups
Cardamom Powder - 1/2 Tsp
Ghee - 1 Tsp

Jalebi


Method :

Soak the urad dal in water for atleast 2 Hours. Wash and Drain the water completely.

                          

Grind it to smooth paste. Add less water (less than 1/4 cup) to grind. Transfer the grinded batter to a bowl. Add food color and baking soda, mix it well. ( Consistency should not be too thick or too watery) If it goes too watery nothing can be done so keep an eye.

                          

I used a disposable piping cone which comes ready-made. You can also use thick plastic bags too.
Sugar Syrup : Boil 2 cups water and add 2 cups sugar to it. Keep stirring. Boil until sugar syrup gets right consistency( ie 1 string level) and add cardamom powder and 1 Tsp Ghee. Stir and turn off the stove.

                          

Heat 1/2 Litre oil in a large flat pan which has a flat base. Once it gets hot start piping the jalebi batter one by one slowly. Watch the heat and adjust accordingly. It will take 12-15 minutes to get nice crisp jalebi's. Turn both the sides and cook carefully. 

                         

Remove it from oil with a laddle and immedietly put it in the sugar syrup. Immerse for 3 minutes and transfer it to another bowl.
     
                         

Jalebi's are ready with nice texture and flavor. Does it look mouth-watering, try it hot.

Moong Dal payasam



Ingredients :

Moong Dal - 1 Cup                                                               Preparation Time : 15 Minutes
Milk - 2 Cups
Water - 1 Cup                                                                        Serves : 6 People
Sugar - 1 Cup
Cashew - 3 Tbsp
Dried Grapes - 3 Tbsp
Cardamom Powder - 1 Tsp
Ghee - 1 Tbsp
Moong Dal Payasam
Method : 

Dry Roast the Moong Dal for 5 minutes. Dont let the color change. And pressure cook the Dal with 1 cup water.

                             

Boil the milk in a separate bowl. Add the cooked Dal to the milk and stir it. Add sugar and keep stirring it.

                             

Once the payasam gets to nice creamy consistency, add cardamom powder and stir it.

                             

Simmer the stove. Heat ghee in another pan and toast the cashew and dried grapes. 

                             

Switch off the stove. Add shredded coconut and the fried cashew/ Dried grapes to the payasam. Stir it.

                             

Moong Dal Payasam is now ready to serve.

Cashew Cake (Mundhri Cake) Cashew Halwa


Ingredients :

Cashew Nuts - 1 Cup                                                   Preparation Time : 1 Hour
Sugar - 1 1/2 Cup
Ghee - 1  1/2 Cup                                                        Serves : 30-40 Pieces Approx
Cardamom Powder - 1 Tsp
Milk - 1/2 Cup
Cashew Cake

Preparations : 
        Before you switch on the stove, few preparations has to be done prior to that.
Large pan ,to spread the cashew sweet. Spread some ghee in the large pan to avoid stickiness. Place it readily near you.
Knife, to cut the sweet to make slices.                

Method :

Soak the cashew nut in 1/2 Cup milk for at-least 1 Hour. Separating the milk, add the cashews in a mixer jar.

                             

Grind it to a smooth paste by adding the milk. Dont make the paste watery, it has to be thick. Empty the cashew paste directly in a pan. Add the given amount of sugar to it.

                             

Now switch on the stove. The sugar will start dissolving. Once the sugar dissolves completely, simmer the stove. Keep on stirring it continuously. If you dont stir, cashew will start burning and color will start to change. So keep an eye. Adjust the temperature accordingly.

                             

Once the cashew paste gets thick add ghee little by little by stirring it continuously. Finally add cardamom powder to it and stir it. Completely add all the ghee to it. You'll note the sweet becoming more thicker and bubbles protruding. Switch off the stove and pour the sweet in the plate. 

                             

Spread evenly and make it smooth. Use a small steel cup with some ghee under it. Rub it on the sweet to spread it evenly. Let it cool for 10 minutes and slice it to your own shape using a knife.Once you have done making slices leave it for a an hour before splitting it.

                             

Allow it to cool completely before storing it in a container.



 Nice yummy Cashew Cake is ready.
