Alleppey Fish Curry



Ingredients :

Fish - 1/2 Kg                                                                       Cooking Time :30 Minutes
Raw Mango - 1 Cup
Small Onions - 1 Cup                                                          Serves : 4 People
Ginger - 2 Tbsp chopped
Green Chilly - 2
Chilly Powder - 1 Tsp
Curry Leaf
Turmeric - 1/2 Tsp
Tamarind extract - 2 Tbsp
Coconut Oil - 3 Tbsp
Coconut Milk - 2 Cups
Salt

Alleppey Fish Curry
Method :

Clean the fish and set aside in a bowl. Grind the coconut and extract the milk from it.


                           


Heat a pan and add 3 Tbsp coconut oil. Add chopped onions, Green chilly and Ginger juliennes. Saute well for few minutes. Add raw mangoes which is cut into cubes. Stir well. Finally add Turmeric powder and Chilly powder. Close the pan with the lid and cook for 5 minutes.

                           

At-last add tamarind extract, coconut milk and salt. When the coconut milk starts to boil add fish to it and simmer the stove. Switch off the stove in 3 minutes. Transfer the curry to a serving dish.

                          

Have alleppey fish curry with Steaming rice, Tapioca masala and papad.
Enjoy nice aroma of the coconut oil.

Baked Fish, Baked Pompano, Vavaal Meen Grill



Ingredients :

Pompano/Vavaal Meen - 1 Lb                                            Baking Time : 15-20 Min
Ginger/Garlic Paste - 1 Tsp                                                Marinate Time : 1 Hr
Fish fry Masala - 1 Tsp                                                       Temp : 350' F
Salt - 1 Tsp                                                                         
Lime extract - 1 Tsp
Oil
Baked Fish
Method :

Take a small bowl and add Ginger/Garlic Paste, Salt, Fish Fry Masala and Lime Juice.


Mix it well as a paste. Add 1 Tbsp oil to the mix.


Clean the Fish and Drain the water well. Slice the skin both the sides so that the masala gets well into it.


Apply all the masala one by one in the fish. Allow it to marinate for 1 Hour before baking.


Set the Convention Oven at 350' F. Spray oil on a foil sheet and arrange the fish in a pan. Again spray some oil on the fish. Place the Pan inside the oven and bake at 350' F for 15-20 Minutes.


Baked fish is now ready. Enjoy having it hot.

Fish Curry/ Meen Kulambhu

                 I love trying different methods of fish curry.  Here's one of my fish curry method. You can  use any kind of fish. Here i have used Tilapia boneless.

Ingredients : 

Fish - 1/2 kg / 1 Lb                                                              Preparation Time : 30 Min
Mustard - 1/4 Tsp
Urad Dal - 1/2 Tsp                                                               Serves : 4 People
Onions - 3 Tbsp
Tamarind extract - 3 Tbsp
Curry Leaves
Sesame Oil - 1/4 Cup
Salt
Fish Curry

Ingredients needed for masala paste :

Shallots - 1/2 cup
Tomato - 2 large
Cumin seeds - 1 Tsp
Curry Leaf - few
Turmeric - 1/4 Tsp
Chilly powder - 1 Tsp
Coriander - 1 Tbsp
Sambar powder/Fish curry powder - 1 Tsp

Method :

Chop the Onions and Tomatoes. Heat a pan with 1 tbsp oil and add all the ingredients given to make masala paste. Saute e until onions and tomato cooks wells.

                                 

Cool and grind it to smooth paste. Heat a pan with oil and add mustard seeds, urad dal, onions and saute well.
                                

Add the grinded masala and tamarind extract and stir it.Add some water if needed. Add curry leaves and salt. Close the pan with the lid to avoid splashing. Simmer the stove. 


                               

Clean the fish and drain the water well. You'll note the curry getting thick. Add the fish pieces to the curry and let it completely sink. Close with the lid for few minutes and turn off the stove.

                              

Transfer to a serving bowl.


Serve with rice and Pappad. Have a great lunch.

King Fish Fry ( VanjaraMeen Fry )


Ingredients :

King Fish / VanjaraMeen - 1 Thin  Steak                             Preparation Time : 15 min
Ginger/ Garlic Paste - 1 Tbsp          
Chilli Powder - 1 Tsp                                                           Serves : 1
CornFlour - 1 Tsp
Lime juice - 1 Tbsp
Salt - 1/2 Tsp
Oil - To Fry

VanjaraMeen Fry

Method :
Take Chilli Powder, Ginger/Garlic paste, Cornflour,Lime Juice, Salt in a small bowl. Mix all the ingredients together to smooth paste.

                              

Clean the fish well and place it in a bowl. Apply the mixed paste to the fish .

                              

Marinate the fish for 1 hour. Heat a pan with 3 tbsp oil. And place the fish in the pan.

                              

Keep in low flame. Fry the fish well on both sides until it gets nice golden brown.

                              

Once done transfer it to a serving plate.


Yummy VanjaraMeen fry is ready.

Pomfret fish / Pompano fish / Vavaal Meen Fry

          Pomfret fish is one of the tastiest and well popular fish in India. There are various ways of cooking pomfret fish. This fish has less bones inside. It goes well with Sambar rice and rasam rice.

Ingredients :

Pompano Fish - 4 pieces                                                 Marination Time : 1 Hr
Chilly Powder - 1/2 Tsp
Ginger/ Garlic Paste - 1 Tsp                                            Preparation Time : 10 Min
Corn flour powder - 1 Tsp
Turmeric Owder - a pinch                                            
Salt - 1/2 Tsp
Lime - 1
Oil - For frying

Pomfret fish fry

Method :
Add Chilly powder, Ginger/Garlic paste, Corn Flour powder, salt and lime juice in a small bowl.


Make it has a smooth paste.


Clean the fish and place it in a bowl.


Add the masala to the fish and coat it well. 


Marinate it for 1 Hour before you deep fry. Heat oil in a pan and drop the fish fillets.


Fry it both sides until it gets nice crisp.


Remove from the oil once its nicely cooked. Place it in a paper towel to remove excess oil.


Tasty and spicy pomfret fish fry is now ready. 

Serve hot. Enjoy with meals.

King Fish Masala or Vanjaram Meen Masala

         Fish masala is a simplest and tastiest  non- vegetarian recipe. Hope you'll all love this recipe.You must steam cook the fish and remove the bones & skin from it before you add it to the masala. It was amazing with Roti. Try using boneless fishes to make this recipe.
         
Ingredients :

King Fish - 2 Cups                                                  Preparation Time: 20 min
Mustard seeds- 1/2 tsp
Onions - 1 Cup                                                        Serves : 4 People
Tomato - 1 Cup
Curry Leaves
Coconut Paste - 1/4 cup
Turmeric Powder - pinch
Chilly Powder - 1/2 Tsp
Curry masala powder - 1/2 Tsp
Coriander powder - 1/2 Tsp
Salt
Oil


Method :

Heat a pan & add mustard seeds once it splutters add onions, curry leaves and fry it well. Then add tomatoes and a pinch salt & saute it until it get cooked.

                                   

Add Chilly powder, Curry Masala Powder, Turmeric & Coriander powder and stir it. Then add 1/4 cup coconut paste and salt to it.

                                  

Mix it well and keep in medium flame. Steam the fish separately and remove the bones & skin from it. Crush it to small pieces.

                                 

Cook the masala until all the water evaporates and becomes thick. Finally add the Fish and stir it well.
Close the pan for 2 min until the fish gets well coated in the masala.

                                

Serve hot with Roti or rice. Delicious King Fish Masala is ready.
