Spinach with Cow peas ( Pallak Keerai with Thatta Payir) Thadagini

        This Poriyal has lots of nutrients in it. Spinach & Cow Peas is rich in anti-oxidants and control blood sugar levels. You can use Cow peas(Thatta Payir) with any green vegetables to add extra taste. This recipe is used as a side dish with Sambar Rice, Rasam etc.

Ingredients :

Spinach - 1 Bunch                                                            Preparation Time : 20 Min
Cow Peas(Thatta Payir) - 1/4 Cup Cooked
Onion - 1/4 Cup                                                               Serves : 4 People
Turmeric - Pinch
Chilly Powder - 1/2 Tsp
Salt
Mustard Seeds/Urad Dal - 1/2 Tsp
Oil
Shredded Coconut - 1 Tbsp

Spinach with cow peas

Method :

Chop the spinach and wash it well. Heat oil in a pan & add Mustard seeds, Urad dal, Dried Onions( Badaga).

                             

Then add chopped onions 1/4 cup, saute it. Add Spinach leaves, Turmeric & Salt. Spinach will start to shrink when it gets heated. No need to add extra water to cook, as the spinach itself will release water from it. Cook until all the water evaporates. Then add chilly powder to it.

                             

Cook the Beans( Thatta Payir) before you start cooking spinach. Finally add the Beans to the spinach & mix it well with the spinach.

                             

At-last add shredded coconut & mix it. Leave it in low flame for 2 min & switch off the stove.

                             

Transfer it to a serving dish.


Serve hot with Rice or Chappati.
