Lemon is one of the easiest rice variety prepared very quickly. You can make it with the left over rice too. Lemon rice with Potato curry gives a best combination.
Ingredients :
Cooked rice - 1 Bowl Preparation Time : 10 min
Lemon juice - 2 Tbsp
Peanuts - 3 Tbsp Serves : 2 people
Green Chilly - 2
Mustard seeds - 1/4 Tsp
Urad dal - 1/4 Tsp
Channa Dal - 1/2 Tsp
Curry Leaf
Turmeric powder - a pinch
Salt
Oil

Lemon Rice |
Take a bowl of cooked rice and spread it on a plate. Let it cool down if it is hot. And sprinkle 2 tsp salt to it.
Stir it until lemon juice gets boiled. Finally add the cooked rice to it and mix it well
Keep in low flame flame for 5 min and transfer it to a serving bowl.
Serve hot with pickle.

Heat a pan with 3 Tbsp oil, Add mustart seeds, urad dal, channa dal and once mustard seeds splutter add peanuts to it, saute it for few seconds.
Add green chilly, curry leaf and add 2 Tbsp lemon juice. Add a pinch of turmeric powder.
Stir it until lemon juice gets boiled. Finally add the cooked rice to it and mix it well
