Soyachunks Vegetable Curry



Ingredients :

Carrot/Potato/Peas - 1 cup                                               Preparation Time : 20 Min
Soya chunks - 1 cup (soaked)
Onions - 1 cup                                                                  Serves : 2 People
Tomato - 1
Turmeric - pinch
Chilly powder - 1 Tsp
Garam masala - 1/2 Tsp
Coconut paste - 1/4 Cup
Mustard seeds - 1/4 Tsp
Curry leaf
Salt
Oil
Soyachunks Vegetable Curry

Method :

Heat oil in a pan and add mustard seeds, onions and tomatoes. Stir until onion and tomatoes cook well. Then add chilly powder, turmeric powder and coriander powder. Stir it well.

                                

Add chopped vegetables and stir it. Grind coconut to smooth paste.

                               

Add coconut paste to the vegetables and add 2 cups water. Add the soaked Soyachunks and stir it. Add salt.

                                   

Let the curry boil well. You can either pressure cook for 2 whistles or boil the curry for 15 minutes. Turn off the stove.

                               

Transfer to a serving dish. Serve with Roti or paratha.
