This is a simple method of making Vegetable Kurma. It can be served with rice, chappati, poori, dosa. Come lets try this recipe.
Ingredient :
Mixed Vegetables - 3 Cups Preparation Time : 20 Min
(Cauliflower, Carrot,
Beans, Potato, Peas) Serves : 4 People
Onions - 1 Cup
Tomato - 1
Ginger/Garlic Paste - 1 Tbsp
Chilly Powder -1 Tsp
Turmeric - pinch
Coriander powder - 2 Tbsp
Bay leaf - 2
Cinnamon - Small piece
Cloves - 3
Anise - 2
Cardamom - 2
Green Chilly - 2
Coconut - 1/2 cup grinded smooth
Curry leaf/ coriander leaf
Salt
Oil
Method :
Wash & cut all the vegetables, keep aside. Heat 3 Tbsp oil in a pan & add Bay leaf, Cinnamon, Cloves, Anise, Cardamom. Fry it for few seconds.
Switch off the stove. Transfer it to a serving dish.

Coconut - 1/2 cup grinded smooth
Curry leaf/ coriander leaf

Method :
Wash & cut all the vegetables, keep aside. Heat 3 Tbsp oil in a pan & add Bay leaf, Cinnamon, Cloves, Anise, Cardamom. Fry it for few seconds.
Add 1 Tbsp Ginger/Garlic Paste and saute it until raw smell goes off. Add chopped Onions & Tomato.
Add the cut vegetables, green chilly, Turmeric, salt & fry it for 3 min. Then add chilly powder & coriander powder.
Grind the coconut into smooth paste. Add the coconut paste to the vegetables and add some water. Cook until the curry comes thick. Garnish with curry leaves & coriander leaves and stir it.
Switch off the stove. Transfer it to a serving dish.
Serve with Rice, Chappati, Poori, Dosa or Idly.
