Brinjal curry ( Eggplant curry )


             This method of brinjal curry has a excellent taste and flavor. It tastes best with Sambar rice and curd rice. Specially sesame oil gives rich flavor to the recipe. Lets try this recipe.

Ingredients :

Brinjal - 5                                                                  Preparation Time : 20 Min
Mustard seeds - 1/2 Tsp
Garlic - 1 Tsp crushed                                               Serves : 2 People
Onions  - 1/2 cup
Curry leaf
Tomato - 1
Chilly Powder - 1  Tsp
Turmeric Powder - pinch
Salt
Sesame Oil







Method :

Heat oil in a pan & add mustard seeds, once it splutters add crushed garlic. Then add onions, curry leaf and tomatoes.

                               

Then add brinjals & saute it for few minutes.Add salt, Turmeric and chilly powder and stir it for 2 min.

                               

Add 1/2 cup of water and close the pan with a lid. Cook until the brinjal is well done and all the water is evaporated.
          
                              

Transfer it to a serving dish. Serve hot with rice.
