Paruppu Vadai , Aama Vada


              Vadai is a important Appetizer in South Indian Lunch menu. It is also used as a tea time snack. Come lets try it.

Ingredients :

Soak : 1 Hour
Chana Dal - 1/2 Cup                                                  Time to prepare : 30 minutes
Toor Dal - 1/4 Cup
Raw Rice - 2 Tbsp                                                     Total Vadas : 10 Approx

Paruppu Vadai
To Grind with soaked Ingredients :
Ginger - 1''
Garlic - 4 pods
Fennel seeds - 1 tsp
Red Chilly - 1
Salt - 1 Tbsp

To Mix with Grinded Flour :

Onion - 1 cup chopped
Curry Leaf - Few
Cilantro - 1 cup chopped
Green Chilly - 2 chopped


Method :

        Soak the Channa dal, Toor dal and rice together for  minimum 1 hour. Wash it twice or thrice before grinding. Clean the ginger and garlic.

                                

Filter the water from the soaked dal and add it to the mixer. Add Salt, Ginger, Garlic, Fennel seeds and Red chilly to it. Add just 2 Tbsp water to grind if needed.Grind it to coarse paste. Dont grind it, too smooth or too coarse. Make sure you don't add to much water.

                               

Take a large bowl, add chopped onions, Curry leaf, Cilantro leaves and green chilly. Mix all the ingredients. Make it has small balls. Place the ball in your left palm and press slightly with your right palm. Just as in the picture below.

                               

Heat the oil beside that. Complete making all the flour before oil gets hot.

                               

Drop the flour balls one by one and fry until golden brown. It will take 5 minutes to get nice crispy vadas.

                               

Crunchy and Crispy vada's is ready. Have hot with Tea or Coffee.

Crispy Dal Vada



Ingredients :

Soak : 1 Hour
Channa Dal - 1/2 Cup                                                Time to prepare : 30 minutes
Toor Dal - 1/4 Cup
Raw Rice - 2 Tbsp                                                      Serves : 4 People


To Grind with soaked Ingredients :                           To Mix with Grinded Flour :
Ginger - 1''                                                                Onion - 1 cup chopped
Garlic - 4 pods                                                          Curry Leaf - Few
Fennel seeds - 1 tsp                                                  Cilantro - 1 cup chopped
Red Chilly - 1                                                            Green Chilly - 2 chopped
Salt - 1 Tbsp

Crispy Dal Vada
                                   
Method :

 Adjust the heat accordingly. So that the vada's don't burn. Complete vada's with all the flour.

                            

Crispy Crunchy Dal vada's is ready.

Serve hot.

Medhu Vadai

        Medhu Vadai is one of my favorite recipe, highly rich in protein. Medhu Vadai is the base recipe of Thayir Vadai and Sambar Vadai. It is so easy to make, i usually use mixie to grind it. Try this & post your comments.

Ingredient : 

Urad Dal  - 1 cup                                                             Preparation Time : 30 min
Rice - 1 Tbsp
Ginger - Small piece                                                         Serving size : 20 Pieces
Onions - I cup
Pepper - 1 Tsp
Green Chilly - 4
Coriander Leaves
Baking/Cooking Soda - A Pinch
Curry Leaves
Salt
Oil


Method :
Soak the Urad and rice combined for 1/2 an hour. Then wash & drain the water completely. Put the Urad Dal & Rice in a mixer jar, add green chilly, salt to it. Grind it smooth flour without adding water, add water if its very rough to grind. Transfer it to a bowl.

                             
 Chop the Onions, Coriander leaves & Ginger and add it to the grinded flour. Add crushed pepper & cooking soda to it.
                             

Mix all the ingredients well and keep it aside. 

                            

Meanwhile heat oil in a pan, once it gets hot, take a small amount of  flour mix & make a whole in the center with your thumb finger and put it in the hot oil.

                            

Keep a bowl with plain water aside. Wet your hands slightly very time before taking the flour, so that it may be easy for you to put the vadai's in the oil. If you don't use water, flour may be sticky & hard to form a shape.

                           

Cook both the side for 10 min until it turns golden brown. Transfer it to a plate with a paper towel

                              


                                 
Hot & Crispy  Medhu Vadai is ready.
