Valaikai Chip, Banana Chips


Ingredients :

Raw Banana - 2                                                                         Cooking Time : 20-30 Min
RefinedOil/Coconut oil - 1/2 Lt
Chilly Powder or Pepper Powder - 1/2 Tsp
Turmeric - 1/2 Tsp
Salt - 1 Tsp

Method :

Clean the raw banana and make it to thin pieces using a slicer.


You can directly slice it in the oil or slice it in a plate and drop it in the oil, little by little.


Heat oil in a pan and drop the banana slices in the oil.


Make sure the oil is in right temperature so that the banana's doesnt burn away.


Stir it occasionally using the laddle. Once it turns crispy, remove from the oil. Filter the oil and transfer it to a paper towel.


Once you are done the entire banana's, mix salt,chilly powder or pepper powder and turmeric in a small bowl. Sprinkle it over the crispy banana chips. Allow it to cool well before you eat. Store it in a nice air tight container.

Nice snack with hot tea or coffee.

Crispy Fried Moong Dal Snack


Ingredients :

Moong Dal - 1 Cup                                                    Soaking Time : 3-4 Hours
Turmeric - A pinch
Pepper - 1/2 Tsp                                                         Cooking Time : 30 Minutes
Salt - 1/2 Tsp
Asafoetida - A pinch                                                  Serves : 4 People
Cashews - 10 
Oil -  To fry
Crispy Fried Moong Dal Snack
Method :

Clean the Moong dal well before soaking.


Soak it in water for 3-4 Hrs with a pinch of baking soda and salt.


Wash it well and drain out the water completely. Take a nice thick cloth and spread moong dal over it, so that the moisture gets well  dried. It may take 30 Minutes.


By the time it gets dried heat oil in a pan. You need a stainless steel filter to fry the moong dal, if not nice wide ladle with small holes will be great. I used a filter.


Add some moong dal in the filter and just immerse it into the hot oil. Make sure the oil is hot at right temperature so that it doesn't burn the dal. It may take 6-8 minutes to turn nice crispy.


Transfer it to a paper towel to remove excess oil. And finally transfer it to a large bowl. Do the same with entire dal.


Finally add Pepper powder, Turmeric, Salt and asafoetida. Fry cashew in the same oil and garnish it.
Mix all ingredients together.


Allow it to cool down well. Store it in a air tight container for freshness.


Enjoy your today's tea with this moong dal snack.

Murukku


Ingredients :

Idly Rice/ Raw Rice - 1 Cup (Soaked for 1 Hr)                  Preparation Time(Dough) : 15 Minutes
Fried Channa Dal - 1 Cup                                                   Cooking Time : 30 - 45 Minutes
Red chilly - 2                                                                       Soaking Rice : 1 Hour
Garlic - 3 Pods                                                                     Quantity : 30-40 Murukku Approx
Salt - 1 Tsp
Cumin seeds - 1 Tsp
Sesame seeds - 1 Tsp
Ajwain seeds/Omam - 1/2 Tsp
Oil - 1 Lt
Murukku
Utensils Needed :
2 large Spatula
Murukku Maker

Method :

Heat 1 Litre oil in a large pan before you start preparing the dough, so that oil reaches right boiling point.
Add Fried Channa Dal in a mixer jar and grind it to smooth powder and empty it to a large mixing bowl.

                         

Wash and drain the water from the soaked rice. Add it to a mixer jar with Red chilly, Garlic and Salt. Add 1/4 cup water and grind it to a smooth paste.  

                        

Add the rice flour paste to the fried channa dal powder kept in the large bowl. Add Sesame seeds, Ajwain seeds and Cumin seeds to it. Mix all the ingredients together to form a nice soft dough, add water if necessary. Finally add 3-4 Tbsp boiling oil which is kept to heat, to the dough to get nice crispy Murukku.

                       

You need two large spatulas with holes which is used for deep frying. Take a sufficient quantity of dough and add it in a murukku maker. Press the Murukku maker as shown in the picture below. Drop it in the oil carefully one by one. Reduce the temperature and Adjust the temperature accordingly. Turn the murukku's until it turns golden brown and crispy. Remove from the oil and place it on a paper towel to remove excess oil.

                      

Nice crispy Murukku is ready. Let it cool down completely and store it in a air tight container to retain freshness for a long time.

Spicy Puffed Rice, Poha (Kara Pori)


Ingredients :

Puffed Rice -  4 Cups
Oil or Ghee - 2 Tbsp
Garlic - 4
Red Chilly - 2
Curry Leaf
Badaga or fried onions - small piece
Fried Channa - 1/4 cup
Peanut - 1/4 Cup
Turmeric - 1/2 Tsp


Method :
Heat a pan with oil or ghee. Add Crushed garlic and saute it for a while. Add Red chilly and curry leaf. Then add fried channa dal and peanuts. Toast it for 2 minutes.


Add Turmeric and Puffed rice to it. Mix it well until turmeric gets well coated to it.


Simmer the stove and keep on stirring. It will take approx 10 -12 minutes. More you keep stirring, you'll get more crispness. If you don't stir it, all the ingredients will start to burn. So keep an eye.


Once done immedietly transfer it to another vessel or switch off the stove, keep stirring it in the same pan until the pan gets cool.


Enjoy with Mixture and Muruku.
