Goat's Brain Masala



Ingredients :

Goats Brain - 2 pieces                                                      Preparation Time : 15 min
Mustard seeds - 1/4 tsp
Urad dal - 1/4 Tsp                                                            Serves : 2 People
Onions - 2 Tbsp
Coriander/Curry Leaf
Chilly powder - 1/2 Tsp
Turmeric powder - pinch
Pepper powder - 1/4 Tsp
Salt
Sesame Oil - 2 Tbsp


Method :

Clean the Goats Brain and drain the water. Heat a pan with 2 Tbsp oil. Add mustard seeds and urad dal. Once it splutters add onions and curry leaf.

                                   

Then add Goats Brain, Salt, Turmeric powder and Chilly powder. Add some water to it and stir it.

                                   

 Close with a lid and stir frequently. Usually Goat's brain gets cooked quickly. Add coriander leaf and pepper powder and stir it.

                                   

Once the water has been half dried, turn off the stove. And transfer it to a serving bowl.

Instant Mutton Briyani, Mutton Dum Briyani



Ingredients :

Mutton / Goat - 1/2 Kg                                                       Preparation Time : 45 Minutes
Basmati Rice - 2 cups
Onions - 1 cup                                                                    Serves : 4 - 5 people
Tomato - 2 large
Mint leaf - 1 bunch
Curry leaf
Cilantro leaf
Turmeric - 1/2 Tsp
Ghee - 2 Tbsp
Oil - 4 Tbsp
Salt
Sakthi  Biryani Masala - 2 Tbsp


Method :

          Wash and clean the mutton. Drain the water completely. Add 1 tbsp Sakthi Briyani masala to the mutton and marinate it for 30 min.
         Heat oil in the pressure cooker and add chopped onions. Saute until slight golden brown. Add tomatoes, mint leaf, curry leaf.

                              

Add 1 tbsp sakthi briyani masala, Turmeric powder and mix it well. Add coriander leaf.

                                          

 Add the marinated mutton in the pressure cooker. Mix it well. Add 1 cup water and pressure cook the mutton for 3 whistles.

                             

Once the mutton gets cooked add 3 cups water,once the water boils add basmati rice. Add 2 Tbsp ghee. Stir occasionally until water gets almost dried.

                             

 Close the pressure cooker and simmer the stove to lowest temperature for 15 minutes. You can also place the cooker on a dosa tava if your pan is sensitive to extreme heat. Once the pressure is released completely Mix the briyani. Add some more ghee if needed..

                            

Enjoy mutton briyani with boiled egg.

Mutton Kola Urundai


               Mutton Kola is one of my favorite dish. I learnt it from my mother-in-law. She prepares amazing kola urandai. People who have tried this only knows its real taste. If you haven't tried, its a must try recipe. You'll become a addict to it. It has a pretty long process so don't get lazy, wear your aprons and get start to cook.

Ingredients :

Mutton/Goat Keema - 1/2 Kg                                             Preparation Time : 
Mustard seeds - 1/2 Tsp                                                      Masala : 10 min
Urad dal - 1/2 Tsp                                                               Cook Keema : 20-30 min
Curry Leaf                                                                           Final sautee : 10 min
Oil - 2 Tbsp                                                                         Serves : 4 - 6 people

Mutton Kola Urandai

Ingredients to Roast and Grind :

Coriander seeds - 2 Tbsp
Cumin Seeds - 1 Tsp
Red chilly - 2
Curry Leaf - few
Urad/ channa dal - 1 Tsp

Method : 

Heat a pan with 1 tsp oil, roast all the ingredients until nice golden brown. Keep aside until it cools.

                                   

Wash and drain water completely from the Goat keema. Add the roasted ingredient in the mixer jar and grind it nice coarse powder, then add keema with the grinded powder. 

                                   

Carefully run the mixer until the masala powder gets mixed with the keema. Transfer the keema to a bowl.

                                   

Take a large vessel with half water filled and let it to boil in high temperature.Take a small quantities of the keema and roll it has small balls. Complete the whole process with entire grounded keema. Drop the keema balls one by one into the boiling water and close it with a lid.

                                 

 Cook in high temperature for 20-30 minutes. Water will be almost evaporated. Remove the keema balls from the water and place it separately. (Keep the left over cooked water aside).

                                  

Heat oil in a pan and add mustard seeds, urad dal and curry leaf. Once splutters add the keema balls. Saute it well for 5 minutes. Add 3 tbsp cooked water to it and cover it with a lid. Once the water is evaporated turn off the stove and transfer it to a serving bowl.

Simple Mutton Curry

              This simple mutton curry is my mothers recipe which we call as UliBadu Aambara in Kannada. This curry doesn't require much ingredients and also very simple to prepare in short time. Idly's are the best combination for this curry. The three main ingredient enhances the curry flavor Sesame oil, Curry leaf and small onions. So don't try to miss anyone one of this ingredients. Lets start to cook this sunday.

Ingredients :

Mutton or Goat meat - 1/2 Kg                                         Preparation Time : 1/2 hr
Mustard Seeds - 1/2 Tsp
Small Onions - 1 Cup                                                       Serves : 2 People
Curry Leaves
Badaga( Fried Onions) - 1 Tsp
Turmeric - 1/2 Tsp
Chilly powder - 1 Tsp
Curry Masala Powder - 1 Tsp
Coriander Powder - 1 Tbsp
Sesame Oil - 4 Tbsp
Salt - As needed



Method :

Heat the Pressure cooker with oil and add mustard seeds, onions, Curry leaf, Badaga(fried onions).


Clean the Meat well with cold water and drain off the water completely. Add the meat in the pressure cooker. Add salt and Turmeric powder.


Stir the meat well until the color changes.


Add Chilly powder, Curry masala powder and Coriander powder.


Mix it well, you''ll note water oozing out from the meat. If not add 1 cup water to it. Once it boils close the pressure cooker lid.

Pressure cook it for at least 5-6 whistles. Once done open the lid. Check whether the meat is cooked well, As well as the salt and spicyness.


Serve hot with hot Idly's and dosa.

Mutton Fry

                 This is the mutton fry which i have told in mutton gravy recipe. In this method, mutton is cooked in the mutton gravy and separated from the gravy. You can also prepare by pre-cooking the mutton in the pressure cooker with some turmeric & salt. This mutton fry goes well with hot steaming Idly's. Lets enjoy this mutton fry.

Ingredients : 

Mutton/ Goat - 1/2 Kg                                                    Preparation Time : 15 Min
Onions - 1 Cup
Mutton Fry
Tomato - 1/2 cup
Cumin Seeds - 1 Tsp
Mustard Seeds - 1/2 Tsp
Chilly Powder - 1 Tsp
Curry Masala - 1 Tsp
Coriander Powder - 1 Tsp
Pepper Powder - 1 Tsp
Salt
Oil

Method :
Above is the link for mutton gravy.This is the mutton pieces separated from the mutton gravy. (Otherwise you can cook the mutton separately with some turmeric in a pressure cooker.) Heat a pan with 3 Tbsp oil and add mustard seeds & cumin seeds.

                                 

Then add onion and saute it until slight golden. Add tomatoes, curry leaf & saute it.

                                 

Then add chilly powder, curry masala powder & coriander powder. Finally add the mutton pieces & 1/2 cup mutton gravy.

                                 

Stir the mutton pieces well until it mixes well with the masala. Stir it for 2 Minutes. Finally garnish with Pepper powder & coriander leaves.

                                 

Mutton fry is now ready. 

Serve hot with Mutton Gravy.
