Vegetable Uppuma


         A simple and healthy breakfast recipe. Here's a variation of Uppuma with healthy vegetables.

Ingredients :

Sooji / Rava - 1/2 Cup                                                              Preparation Time : 5 Minutes
Onions - 1 Cup                                                                         
Green Chilly - 2                                                                        Cooking Time : 20 Minutes
Curry Leaf/ Coriander leaf
Beans       )                                                                                  Serves : 2 People
Carrot      ) - 1 Cup
Broccoli   )
Mustard Seeds - 1/4 Tsp
Urad/channa dal - 1/2 Tsp
Turmeric - 1/2 Tsp
Salt
Oil - 3 Tbsp
Ghee - 1 Tbsp
Water  - 1 Cup
Masala Uppuma
Method :

      Roast the Rava in a pan with 1 Tsp Ghee or Oil for 5 Minutes. Transfer it to a plate

                                

Heat oil in the same pan and add Mustard seeds, Urad dal/Channa Dal once it splutters add onions, green chilly and curry leaf. Stir it well. Add the vegetables and toss it.
      
                               

Add water and salt to it. And allow it to boil for 10 Minutes.

                              

Once the water gets to boil simmer the stove and add the rava and stir it. Close the pan with a lid for 3 minutes. Once done open the lid and stir the Uppuma well. Transfer it to a serving bowl.
    
                              

Garnish with curry leaf and coriander leaf. Serve hot.

Mint Chutney (Pudina Chutney)


Ingredients :

Mint Leaf - 1 Bunch                                                           Preparation Time : 10 Minutes
Red Chilly  - 1
Coriander seeds - 1 Tsp                                                      Serves : 2 People
Cumin seeds - 1/2 Tsp
Urad Dal - 1/4 Tsp
Channa Dal - 1/2 Tsp
Tamarind - 1/2'' size( A small piece)
Garlic  - 1 pod
Oil - 1 tsp
Salt
Coconut - 1/3 Cup
Mint Chutney
Method :

 Take all the ingredients in a plate before you start roasting everything.


Heat a pan with a some oil and roast all the ingredients well until golden brown.


Add Mint leaves and stir it until the moisture dries up well.

Switch off the stove and cool the ingredients well.

Use fresh coconut in a mixer jar.

Add the roasted ingredients along with the coconut in the mixer jar. Add salt before grinding.

Grind it to smooth paste. Add water to form a smooth paste.

Transfer the Chutney to a serving bowl. Serve with hot Idly, Dosa or Rice .

Capsicum Chutney or Bell Pepper chutney

          Here is simple, easy and a healthy chutney. You can have with Idly or Dosa.

Ingredients :

Capsicum - 1                                                                     Preparation Time : 5 Minutes
Tomato - 1
Cumin Seeds - 1 Tsp                                                         Cooking Time : 5 Minutes
Green Chilly -1
Salt - 1/2 Tsp                                                                     Serves : 2 People
Oil - 1 Tbsp
Capsicum Chutney
Method :

Clean the bell peppers and remove the seeds from it. Wash tomato and green chilly. 


Chop the bell peppers into small cubes. Chop tomatoes.


Heat a pan with 1 tbsp oil and add all the four ingredients.


Keep stirring it until capsicum and tomatoes cooks well.


Cool down well before grinding it. Add salt while grinding.


Its not necessary to add water. Use if needed. Grind to smooth paste.


Transfer it to a serving bowl.

Idiyappam with coconut milk

              I love Idiyappam with coconut milk flavored with cardamom powder. My mother used to prepare Appam with coconut milk. I'll make instant idiyappam the next day and have with the left over coconut milk. Coconut milk goes well with everything if you like the flavor of coconut milk and cardamom. I prepared my own home-made Idiyappm this time for my dinner. Come lets try this recipe.

Ingredients :

Idiyappam - 1 bowl                                                       Preparation Time : 10 Min
How to make Idiyappam
                                                                                      Cooking Time :  10 Min
To prepare Coconut Milk :
Coconut -(1 Half Shell) -
Water - 1/2 or 1 cup
Sugar - 1/4 Cup
Cardamom - 4 tsp
Idiyappam with coconut milk
Method : 

Break the coconut and scrap the coconut pulp from it. Grind it smooth, add warm water while grinding, so that you can remove excess milk from it.

                                  

Filter the coconut milk using a filter. Once again add some more water and grind the coconut to remove remaining milk from it.
                                

Take the cardamom in a mixer jar, add 1 Tsp sugar to it and grind it to smooth powder. Keep aside.

                                

Add the coconut milk in a pan and boil it. Once it gets warm add sugar and dissolves it. 

                               

Once it gets hot, add 1 Tsp cardamom powder and turn off the stove. Dont allow it to boil well. Allow to cool.

                               

Prepare idiyappam(as given in the link) before you start the process. Take a pieces of Idiyappam in a small cup and add coconut milk to it. Take your spoon and have hot or cold.

Idiyappam Sevai


Ingredients :

Idiyappam - 1 Bowl                                                                Preparation Time : 5 Minutes
Onions - 1 Cup                                                                       Cooking Time : 15 Minutes
Green Chilly - 3 
Mustard seeds- 1/2 Tsp                                                          Serves : 3-4 People
Urad/Channa dal - 1 Tsp
Coriander leaf/ Curry Leaf
Turmeric - 1/2 Tsp
Oil - 2 Tbsp
Salt - 1 Tsp
Idiyappam Sevai
Method :

      Prepare idiyappam before you start making Idiyappam sevai. Entangle the idiyappam on a plate and spread some salt on it.

                                

        Heat a pan with oil and add mustard seeds, urad dal and channa dal. Then add chopped onions, curry leaf, green chilly and stir it well until onions gets cooked.

                                

          Add idiyappam to the onions and add some turmeric powder. Stir well until idiyappam gets well coated with turmeric. Stir for few minutes and switch off the stove. Garnish with Chopped coriander leaves.

Idiyappam , How to make Home-made Idiyappam


Ingredients :

Idly Rice - 1 Cup                                                                    Preparation Time : 15 Min
Oil/Ghee - 1 Tbsp                                                                  Cooking Time : 15 Min
Idiyappam or Muruku Maker                                                 Serving size : 12-15 Idiyappam's
Steamer or Idly Maker
Home-made Idiyappam
Method :
              Soak idly rice for 3-4 Hours. Wash well and grind it smooth in a mixer jar or grinder. Add water while grinding. It has to be very smooth and medium consistency. 

                             

Add the batter in a non-stick pan and turn on the stove. Keep in low temperature. Keep stirring continuously. The batter will become thick as it gets hot and difficult for stirring.

                             

Once it nicely forms a dough, add some oil or ghee and roll it. It might take only 5 minutes to complete this process.
                                

Once you finish, take your idiyappam maker  and stuff the hot flour dough into it. Dont let the dough cool off. Otherwise it will get dried and become tough to squeeze the flour.

                                          

Heat your steamer and squeeze the flour into it directly. Close the lid and steam it for 10 Minutes.

                        

Nice hot idiyappam is ready. Transfer to a serving dish. Serve hot with coconut milk or curry's.
