Paneer Stuffed Paratha, Paneer Paratha



Ingredients :

Paneer/ Cottage Cheese - 1 cup                                           Cooking Time : 15 Min
Onions - 1/2 Cup
Tomato - 1                                                                            Serves : 1 Cup paneer / 6-7 parathas
Coriander leaf
Green Chilly - 1 Finely chopped
Cumin seeds - 1/4 Tsp
Turmeric -1/4 Tsp
Salt - 1/2 Tsp
Oil - 2 Tbsp
Wheat Flour Dough
Paneer Paratha

Method :

Heat oil in a pan and add mustard seeds, cumin seeds, onions and saute it well. Then add chopped tomatoes,Coriander leaf, salt and turmeric. Tomato has to get well smashed before adding panner to it.
                           

Finely add Grated Paneer to it and stir well. Make sure very ingredients mixes well. Cook for 2 minutes stirring it. Switch off the flame and cool it well.

                          

Roll the wheat flour dough pretty flat and place a small quantity of Paneer on it and close the dough covering the paneer. Dust some flour on it.

                         

Roll the flour dough again carefully without the paneer popping out. Dust flour often so that the dough doesn't crack. Prepare required amount of parathas you need before you start toasting it.

                        

Heat a pan and toast the parathas one by one. Add some oil or ghee and cook until golden brown.

                      

Paneer Stuffed Parathas are ready. Have hot with Raita or Curry's.

Cauliflower Stuffed Chappati



Ingredients :

Wheat Flour Dough                                                                Preparation Time : 15 Min

For stuffings:

Mustard seeds - 1/4 Tsp
Cumin seeds - 1/2 Tsp
Onions - 1/2 Cup
Cauliflower shredded - 3 Cups
Turmeric Powder - 1/2 Tsp
Chilly Powder - 1/2 Tsp
Salt
Oil/ Ghee
                                    
Method :

Heat oil in a pan and add mustard seeds, onions, cumin seeds. Then add shredded Cauliflower and add turmeric, salt and stir it.

                              

Close the pan with a lid and cook in low flame for 10 minutes. Allow it to cool completely. Take a small roll of dough and roll the flour flat.

                              

Place some cauliflower over the rolled flour and wrap it as shown in the picture.

                              

Dust some powdered flour on the dough and roll it once again without the stuffing popping out. Heat a Pan and place the flour.

                              

Add Oil/Ghee and cook both sides until nice crispy golden brown.

                                                    

Serve hot with Raita or Curry.

Lachha Paratha ( Layered Paratha )


                              
Ingredients :

Wheat Flour  - 1 Cup                                                          Preparation Time : 10 Min
All Purpose Flour (Maida) - 1/4 cup
Salt - 1 Tsp         
Oil                                                                                      Approx : 5-7  Parathas 
Water - 1/2 cup

Lachha Paratha
Method :

Take a large bowl and add 1 cup wheat flour, 1/4cup all purpose flour, salt, water and mix the flour well to make a soft dough.

                        

Place the dough in a air tight container for 30 minutes. Then take a lime size ball and roll it into very thin sheet.

                       

Spread oil using a brush or hands and dust some wheat flour over it. Then fold the rolled sheet 1/2 inch top over top. Once done slightly stretch the folded sheet holding at both the ends. (Dont pull it hard otherwise the sheet will tear).

                     

Roll the folded sheet flour as in the image. Dust some wheat flour on it.

                      

Continue the same method for the remaining flour. Once all is done close the prepared flour for 30 min using a cloth or lid.

                      

After 30 min take a flour a roll it to medium thickness. Heat a pan and put the rolled Paratha.

                     

Cook until golden brown both sides. Apply some oil or ghee.

                     

 Transfer it to serving plate. You can notice layers clearly once cooked.
   
                                
  Serve hot with raita or curry.
